As a native Memphian I am appalled that once again another self professed expert is completely wrong on Q. Reading that article our by our very own G.E. Light his preferences out him as an Alabama sympathizer the land BBQ forgot. Shame, Shame, Shame
I wondered how long it would take to get some BBQ hackles up. The piece was meant in good fun, but I really don’t cotton with all those competitive bbqing events and their silly rules about spare ribs and dry rubs. MY BBQ preferences are variable (but no brisket thank you). I like Interstate but not Rendezvous. I like Archebald & Woodrows’ in Northport but not any version of Dreamland ever. Come on man, MS surely has to have a complex about Memphis the biggest city in “MS”; it almost seems like MS has become the land that BBQ critics forgot. See John T. Edge’s Southern Belly for starters. Note the BBQ I pictured was a fine product from right here in Oktibbeha county and not from Alabama at all.

Archibald’s rocks. It is the standard by which all other BBQ is measured. And finding the place is half the fun.
G E, all in good fun I assure you. So long as you are sure to call brisket brisket and not Q we can debate this issue have an enjoyable and perhaps enlightening time and remain friends. But, while the sauce is important it should only be needed and used sparingly.
I’m heading to Austin and the Republic of TX for a week on 15th; brisket comment was a shot at them and no The Salt Lick does not have the best Q on earth.
